I cobbled together some biscuits tonight at Sarah's request. It's based on an Epicurious recipe, but we were lacking a few ingredients, so I kind of made it my own recipe. They turned out really well, I think, and they were really simple.
2 cups flour
6 tablespoons coconut oil
1 tablespoon baking powder
1 teaspoon salt
1 cup milk
5 tablespoon sweetened condensed milk
I mixed together the flour, the coconut oil, the baking powder, and the salt, then heated it in the microwave for about 90 seconds so that the oil was workable. I added the milk, kneaded it a bit with my hands until it was consistent, and cut the dough out onto a baking sheet in biscuit-sized circles.
After 20 minutes on 425ºF, I removed the tray and spooned the sweetened condensed milk over the top. It melted into the biscuits because they were still hot, which was really nice.
About 96 calories per biscuit, and the recipe yielded 12, so I'd call it a success. :)
